Molded Jell-O Salads

I used to love looking through the Betty Crocker cookbook when I was a kid. 

One thing that always boggled my mind were the Molded Jell-O Salads. 

Unflavored gelatin with a little lemon juice, mayo, vegetables, meat, and eggs. 

I just could grasp this green Jell-O with vegetables salad. 

Here is one receipt that I found. I doubt if I would ever make it, let me know if you do. 


1 pkg. (3 oz.) lemon or lime Jello

3/4 tsp. salt

1 c. boiling water

3/4 c. cold water

2 tbsp. vinegar

2 tsp. grated onion

1/2 c. finely chopped cabbage

1/2 c. grated carrot

1/4 c. finely chopped celery

3 tbsp. chopped green pepper

Dissolve Jello and salt in boiling water. Add cold water, vinegar and grated onion. Chill until thickened. Fold in vegetables. Pour into 3 or 4 cup mold. Chill until firm, about 3 hours. Unmold. Garnish if desired. (An 8×10 long pan may be used.)
